The seeds of the Egyptian black cumin (nigella sativa) are particularly rich in unsaturated fatty acids. They contain both the essential omega-6 fatty acid linoleic acid and the omega-9 fatty acid oleic acid. The naturally occurring essential oils give it its characteristic flavor.
After harvesting, the oil is extracted using a particularly gentle cold-pressing process followed by filtration.
