Due to its simultaneously popular and notorious smell and taste, garlic is valued and used worldwide as a spice. Allium sativum , as real garlic is also called, belongs to the Amaryllis family of the allium plant.
Undamaged garlic bulbs contain alliins and sulfur compounds. If these bulbs are broken open, for example by squeezing or cutting, enzymes split alliin into allicin. This chemical compound is ultimately responsible for the typical garlic smell.
